
EThe world of pastry and baking is constantly evolving, a rapid and continuous evolution. New techniques, or techniques that have always existed, come and go according to current fashions and trends.
One of the most trendy decorations right now is isomalt lollipops. They started gaining popularity some time ago and are becoming increasingly popular; they’re standing the test of time. At first, I found it curious, but now I understand why: it’s something new and unexplored, and it’s a decoration that can be done without much experience.
Using candy as a technique
Caramel has always been used in pastry and catering, but it has always been a technique that very few dared to explore in depth. Only a few brave souls worked with it, always producing impressive works of artful sculptures that amazed us, but for the rest of us mortals, it was, or seemed, unattainable.
My purpose from the beginning was to make isomalt accessible, so that it wasn’t seen as a technique for the privileged, and to show that you can work with caramel, from very simple decorations to creating a spectacular effect.
Suddenly, simple decorations, caramel and isomalt lollipops begin to appear, and the lollipop world is revolutionized.
Isomalt lollipop as a versatile and affordable decoration
There are two fundamental reasons why the trend is still on the rise:
– One is what attracts attention.
Those of us immersed in this sweet world are very used to seeing decorations with chocolate, modeling paste…but, as I mentioned before, although caramel has been used for many years, we are not really so used to seeing caramel or isomalt decorations like lollipops, outside of the industrialized ones we see.
They’re usually a huge hit and really eye-catching on cakes, dessert tables, at events… – Another reason is that making them seems feasible; it doesn’t feel unattainable like creating an artistic candy sculpture. Plus, you don’t need any special tools. All of this encourages us to be bold and give it a try.
Where can we use lollipops?
In tarts or cakes
It’s amazing how much a few lollipops can enhance a cake. They work with any theme by playing with colors and opacities. We can combine the colors of the isomalt or coordinate the decorations and sprinkles we add.


On dessert tables
Lollipops are a common sight on dessert tables because of their eye-catching color combinations and swirls. Children go crazy for them—they love them! And for events like communions, baptisms, and weddings, simple lollipops can be personalized with edible prints, giving them a unique touch. We can add names, dates, various illustrations, and more.
In cocktails
Imagine this: you’re at a gathering with friends, it’s time for a drink, and it’s served with a cocktail lollipop. Sounds great, right? Or perhaps you own a cocktail bar, pub, restaurant, tea room, or similar establishment, and you offer your customers a lollipop to enhance the flavor of their drink and add a little fun. That little touch would definitely set you apart from the competition. It adds an extra layer of intensity, and you love playing with the lollipop and the sound of the ice clinking.

Knowing the techniques for working with isomalt will take your decorations from ordinary to expertly crafted lollipops. You must prepare the isomalt properly for your work to be successful.
